Happy Easter

Easter Biscuits

100g softened butter
200g plain flour
75g caster sugar
1 egg yolk
1/2 tsp cinnamon
1/2 tsp mixed spice
2 tbsp milk
50g currants

Preheat the oven to 180 c or equivalent.
Cream the butter and sugar together, mix in the egg yolk.
Sieve in the flour and spices.
Add the currants.
Mix together to make a dough.
Cut into 1/4 in thick rounds.
Sprinkle with some extra caster sugar.
Bake for 15 minutes.
